I know that it does not look like an Instagram meal (probably because it was cooked on a normal day by a normal person in a student accommodation kitchen) but....
I made the tortilla REALLY crispy (love) and spread a thin layer of vegemite on top.
After that, I cooked an omelette (3 eggs and salt) making sure that the inside was still moist and add some cottage cheese.

Only the whites cause that’s my favorite part, cooked all the veggies at diff lengths just the way I like them! Added them on top cause I just wanted to taste them a little extra and for the egg to be cocked evenly. Ugly burnt gluten free bread cus I like it like that even tho I’m not even gluten free, Parmesan cheese and olive oil on everything

three eggs and a tortilla
just put the eggs on a frying pan and the tortilla on top, then when the eggs are firm enough turn the tortilla and let it get gold on the other side (add salt to the egg).

The dish begins with a layer of cottage cheese on the bottom. Lightly salt it.
On top goes three sunny-side up eggs.
The next layer is two handfuls of mixed greens, tossed in the warm oil and lightly wilted. Here, you add some salt and a good amount of red pepper flakes.
Final layer is a spoonful or two of sauerkraut.

my phone broke and I was broke. so I had to go though 2 months of no phone. I have never been so peaceful. I now know the route to get to places (because I had no maps). Got the habit of only replying to texts at 6:30pm and make plans for the next day at that time. I read so many books and was so notinfluenced by social media. Even the things I was eating changed a lot, no more fast meals you can make in less then 5 min, instead I asked my grandma what to cook and guys it’s awesome. BREAK YOUR PHONE
