three eggs and a tortilla  just put the eggs on a frying pan and the tortilla on top, then when the eggs are firm enough turn the tortilla and let it get gold on the other side (add salt to the egg).

this one is a little harder and a little messier, but... sautee potatoes and onions in an obscene amount of olive oil. Whisk a quarter-buttload of eggs in a large bowl. take the potatoes and onions and oil off the heat, pour them into the egg bowl to kind of temper-ish the eggs, bring the pan back up to temp, whisk the eggs a bit more to make sure they're not pre-scrambling, then fry the whole thing like a thick-ass omelet. slice and serve with some kind of aoli. serves multiple people, keeps well. use enough of everything to make it tall and fluffy with layers of potato and onion suspended in the egg. Depends on the size of your pan. you can either flip it (messy, difficult, works with a nonstick pan) or stick it in the oven to brown the top (easy, clean, requires an oven-safe pan).

I mean, if you're asking for the thing I make most often, when I don't know what else to have for lunch... get a pan hot, put in olive oil, get the olive oil hot, crack in two eggs, get the eggs hot, toast some pita bread, spoon a bit of oil over the eggs, salt, pepper... that might be the best dish any of us ever cook (I've cooked eggs in at least a dozen different ways, and I can't say any of them are better)

my phone broke and I was broke. so I had to go though 2 months of no phone. I have never been so peaceful. I now know the route to get to places (because I had no maps). Got the habit of only replying to texts at 6:30pm and make plans for the next day at that time. I read so many books and was so notinfluenced by social media.
