I mean, if you're asking for the thing I make most often, when I don't know what else to have for lunch...
get a pan hot, put in olive oil, get the olive oil hot, crack in two eggs, get the eggs hot, toast some pita bread, spoon a bit of oil over the eggs, salt, pepper... that might be the best dish any of us ever cook
(I've cooked eggs in at least a dozen different ways, and I can't say any of them are better)

bebesw0rld yeah, the Pita bread I get is the perfect size for two eggs, and it does a good job of soaking up the excess yolk on the plate. Thick enough to soak and to not taste like I'm just eating pure egg yolk, but thin enough to enjoy the richness and not feel like I'm just eating bread.

There is literally nothing better. Any meal, eggs got you. You can cook them a zillion different ways and you can make an omelet or a sandwich with basically anything and it will taste good. You can have them with any carb (bread, rice, noodles, potatoesh and it will make sense. This morning I made a spinach and feta omelet and last night I jazzed up some microwave ramen by putting a soft boiled egg in there. I just really love eggs

I’m a very lazy cook and I’m not really one to snack in between meals but I LOVE to make eggs . And every time I do they end up Not looking like eggs… what can i say its a gift. Ive been teaching myself how to cook more meals lately but i have been implementing eggs into them (i.e. a turkey bacon BLT with an egg) (or a pulled chicken sandwich with an egg) (i really only make sandwiches)

I make fried eggs twice a week...
I make a super soft scramble (the lower and slower you go, the richer they taste. There's an inflection point where you go from basic to incredibly rich. If you haven't hit it, your curds are too big.) For every complex thing I've made... The super soft scramble probably tastes better.
I can make a pretty solid spanish tortilla. It takes a good hour, it usually makes a mess, and I'm probably not doing it right... the onions and the potatoes practically get confit in olive oil, but it comes out delicious as shit and it's impressive.

for a while, when I wanted something expensive, I would think to myself, "oh, let me just look for a cheaper version of it." I end up settling for something that isn't good in any of the ways that made me want the expensive version.
Throw that out. You can get fantastic pieces for cheap, you can thrift a wardrobe you love, but if you're trying to find a cheap copy of something expensive, it's not going to work.
