Spatchcocking a whole chicken is my go to because it can last me the week. Seems intimidating at first, but one youtube short later and you can cook a whole chicken in under an hour at 425Β° F. Plus with the shorter cook time, potatoes, carrots, etc. can go in at the same time, in the same pan. Minimal attention.
I eat part of it the day of and usually end up using the chicken breasts for sandwiches or stir fry later.

seems fancy but it’s just chicken in creamy white wine, butter, caper sauce. also pretty tough to mess up. add a little angel hair pasta on the side, a veggie and a good drinky!

I make mine in a molcajete when I have time, or a food processor when i feel lazy.
1 garlic clove 1 lemon 2 egg yolks 2oz *fresh* grated parm 1 tsp dijon or whole grain mustard 1 dash of worcestershire sauce 4 (oil packed) anchovy filets 1/2 cup neutral oil
Mince the garlic + anchovy. Add the mustard and egg yolks. Slowly incorporate the oil until dressing forms and is emulsified. Then whisk in half of a lemons juice and zest, Worcestershire, parm, a lotttt of fresh pep and salt to taste!
