I make mine in a molcajete when I have time, or a food processor when i feel lazy.
1 garlic clove
1 lemon
2 egg yolks
2oz *fresh* grated parm
1 tsp dijon or whole grain mustard
1 dash of worcestershire sauce
4 (oil packed) anchovy filets
1/2 cup neutral oil
Mince the garlic + anchovy.
Add the mustard and egg yolks.
Slowly incorporate the oil until dressing forms and is emulsified.
Then whisk in half of a lemons juice and zest, Worcestershire, parm, a lotttt of fresh pep and salt to taste!
