This is my favorite recipe and it's super cheap as well. You need one can of coconut milk and three cans of chickpeas as well as some peanut butter. Blend about a third of it and season it with everything you'd normally use (curry paste, salt, paprika, lime juice, turmeric, etc. etc.) Whatever your heart desires. Yummy and vegan too

I have this for days on end and never get tired of it. So many ways to subvert the format with spices and garnishes. It is VEGAN (I am not vegan but respect) so it's something everyone can enjoy.

Being vegan is incredibly easy! legumes are very healthy and cheap, so I'd look into some chickpea curries and lentil dahls. Beans are also great, it's probably easier to just use those as starting points. As for the beyond meat cynicism, I'd at least look up how to prepare tofu well (starch, soy sauce and agave syrup all help). You can make a good butter chicken like dish if you put it in the oven too.

this is so good
u will need: -a can of rinsed chickpeas -tomato -spinach -sour cream -garlic -peanut butter -olive oil
cut the tomatoes and cook them. when already cooked, crush them a little bit. add garlic, chickpeas, spinach, salt, vegetable broth, 3 tbs of peanut butter and sour cream
cover the pot and cook for abt 10-15 mins
here’s the original recipe but instead of nutritional yeast i add the sour cream.
