Being vegan is incredibly easy! legumes are very healthy and cheap, so I'd look into some chickpea curries and lentil dahls. Beans are also great, it's probably easier to just use those as starting points. As for the beyond meat cynicism, I'd at least look up how to prepare tofu well (starch, soy sauce and agave syrup all help). You can make a good butter chicken like dish if you put it in the oven too.

Rapid fire of things I love for high protein, cheap and easy: - Lentil sloppy joes. I get really intimidated by trying new recipes, especially when they’re international cuisines that involve some new spices. That said, I’ve been making dal recently and it can be so easy! I can make a really fancy-tasting dish in like 30min. As someone who eats primarily vegetarian, I eat a lot of tofu and beans and tempeh, but adding lentil dal into the picture has been a great addition to the lineup.

Beans and lentils beans and lentils. Beans especially are easy to heat up, just add spice and flavor. You can get frozen cauliflower rice for not too much, but regular rice will do. Get some frozen veggies and bam you have a meal. Soups are easy to heat and can be easy on the wallet too.
