Ten years ago my annual income was like $12k and I made this all the time because it’s like 75 cents a serving, now it’s just a comfort food that stays in the rotation because it’s so easy.
Add the following to a large skillet or wide pot and give it a little stir:
1 cup rice (not instant) 1 cup salsa 1 can black beans 1 tablespoon chili powder 2 cups of chicken broth 1 can of precooked chicken breast
Heat it up until it starts to boil, then turn it down to simmer, put a lid on and wait 20 minutes. Tilt the skillet to make sure the liquid is absorbed then stir again, turn off the heat and cover with shredded cheese and chopped green onions. Give the cheese a few minutes to melt, serve with a little dollop of sour cream or plain Greek yogurt.

Makes a good dip or served over rice or pasta or anything. Chicken, corn, beans. Bell pepper, garlic, onion. Cream cheese, queso block, and ranch seasoning packets. A can of Rotel or other spiced tomatoes. Season first drop with cumin & a touch of all spice. Second drop cayenne pepper, white pepper, and adjust salt / pepper as needed. Measurements?! Only thing I'd go by is cream cheese block per every 3 chicken breasts. The rest use your ♥️

chicken thighs/breasts + La Costena Chipotle peppers in adobo sauce + cumin + salt and pepper -> put it all in a slow cooker
If you have an immersion blender, use it to mix it up the sauce
goes well in tacos, salads, soups, sandos, with rice, cakes, etc.

- chicken breast - onions - pasta of your choice - green and/or red peppers - tomatoes - salt / pepper - heavy cream - shredded cheese or Parmesan
preseason your chicken and cook with little oil and medium heat, flip abt every 5-7 minutes until they’re crispy, brown and a little black to your preference ofc
When the chicken is done you cut it into slices to your liking (I do straight slices like tenders) You can boil your pasta in a separate pot while the chicken cooks & in the same pan you cooked the chicken, caramelize your onions, and add your veggies & then add your pasta & heavy cream…
let everything simmer on low hit for abt 2 minutes & then add your chicken, mix it all together, cover your pan & then let it simmer on low for 5-10 minutes
& whenever your ready top it off with your cheese… Let it melt into everything else & then it’s ready!

I have an acquaintance whose personality I have always found grating and today I finally realized exactly what it is that I dislike so much: they pride themselves on being an ideal consumer. They get chuffed as fuck at how well marketing works on them to the point of being borderline braggadocious about how quickly and deliberately they react to advertising; even when they’ve been duped or scammed they admire the way they’ve been fooled. It’s so cartoonishly American, they’re like a funhouse mirror that accentuates by own stupid fatso traits and stokes my most antisocial impulses. They say you should “let people enjoy things” but there’s got to be a healthier middle ground where my friend stops enjoying adding to their credit card debt to see every Ryan Reynolds movie in IMAX and I stop enjoying hating them for it.
