I pickled an onion and will not shut up about it. It was so easy and now there is this beautiful pink thing in my fridge. Be warned that this is dangerous bc it will make you eat raw onions by themselves and not be able to stop.

I loved pickled red onions. After the initial investment of vinegar and sugar and whatever seasoning you want to add, all you have to do is buy an onion! The process is quick and boiling vinegar smells good. Now all week I can throw them on my eggs or salads or just pinch them out of the container and eat them over the sink. It’s nice to have an attainable desire. I want a Fort Greene brownstone, my loved ones to live forever, and pickled red onions.

Something fairly easy, but super delicious and rewarding to eat. (Cutting into fun shapes is necessary) I used 3 cups water, 2 1/2 cups of vinegar, 2 tsp of salt, and 2 tsp of sugar for the brine. (I like mine a bit on the sweeter side, but I’ve heard sugar is optional) The fun part is the customization of what veggies you want in there. My choice was cucumber, radish, daikon, red onion, and carrot. The final touches to help with flavoring were garlic, pepper corn, dill, and Thai chilis. (highly recommend the chilis if you like a lil spice) I wonder what combo I‘ll try next.
