I was an avid veggie hater for the longest time. I have a big problem with food texture and often times vegetables dont do it for me and the color freaks me out sometimes. I moved to France a bit ago and the family i live with are veggie lovers (im talking veggie garden and everything). thus, i have had to begin eating vegetables. HOWEVER... I am finding out I actually like them! I also found out I apparently make good green beans?! This may seem super childish to some but I am really proud of how far I have come with eating vegetables. giving myself a pat on the back. Here are some veggies I have begun to eat with todays addition being parsnip (i added a pic of parsnip bc it kind of scared me when i looked at it)! -green beans -zucchini -cooked carrots -cooked spinach -tomatoes (ik its not a veggie but its often lumped in as one) -more random leafy veggies -parsnip next on the list? broccoli ?

Beets, carrots, and corn. These are all of my least favorite things. As I was making some pressed juices for the first time (specifically while I was making beet juice), I learned something new about myself. All my life I've never had a problem eating my veggies when 1 was a kid as opposed to the others. That is until my early adulthood. I've compiled a list of my least favorite vegetables: carrots, beets, and corn. Carrots, because I hate that they have this weird taste to them and contrary to belief, they don't help with your eyesight. Beets, I can't STAND the underlying smell of soil. It just has a lingering smell that fills my brain with a negative connotation. Donā€™t get me wrong, corn is great and all but the fact that it doesnā€™t digest just freaks me out! Now I know what you may be thinking ā€œthis girl is ignorant and a picky eaterā€ to which I would say only one of those things is true. I would not consider myself a picky eater at all! I just have my likes and dislikes and Iā€™ve been learning different ways to cook them or incorporate them into meals to learn to appreciate and like them! :) I hope you take this as a challenge for yourself. Make a list of your dislikes and see if you can overcome them, look at them in a different light. Maybe you were too quick to judge. After youā€™ve tested them, you can finally find out for yourself one final time.

Butternut Squash the vegetable you are!!!! I grew so many last year and have found so many versatile recipes. I love her. Close seconds: broccoli (ngl almost in every meal), GARLIC!!!, asparagus, mushrooms. I WILL NOT STAND FOR BEET HATE! Worst: not to be a child butā€¦ Brussels sprouts. Canā€™t get down with it.

Havenā€™t eaten a vegetable all day? Go ahead and open the fridge. Stand there contemplating. Reach for a handful of spinach. and shove it in your mouth. Gag while chewing. Swallow hard. then Smile and give yourself a little pat on the back.

Y'ALL Seriously what is in the air? Maybe it is just me but these past few weeks (this week specifically) I have been in such a rut and literally cannot drag myself out of it. Literally feeling like I'm going through the motions of my day. Is it just me? Is it the weather? Honestly I feel like before holiday break I was getting a routine and feeling good but January so far has had me dragging my feet. Internally i feel all jumbled up mentally and emotionally (and lowkey physically too). Its not unusual for me to get wintertime blues but this time just really takes 1st place. Anyone else going through this? If you are, we got this. Onward we go :) <3
