BEST CAKE RECIPEÂ
375g of carrots (the fresher they are the better the outcome)Â
400g of sugarÂ
150g of natural yogurtÂ
120ml of oil (coconut oil or butter)Â
4 eggsÂ
345g of flour (not self-raising)Â
1g of sodium bicarbonate(when it interacts with the yogurt it makes the cake moist)Â
8g of baking sodaÂ
To a blender add diced carrots, sugar, yogurt, oil (or butter) and the eggs, and mix it until it becomes a homogenous liquid.Â
Add flour, sodium bicarbonate and baking soda and mix it with a spoon (try to combine it after the baking soda is in you do not want to heavily whisk the batter).Â
Add the mixture to your tray (spread a thin layer of butter and flour in it so that the cake doesn't stick) and bake it at 180C until you can stick a toothpick in it and it comes out clean.Â
For the icing, I like to combine condensed milk (1 can), 3 spoons of chocolate powder and 1/2 spoons of butter in a pan and mix it until baubles form. After that count for 3 minutes and when the mixture is thickened pour it over the cake.
