boil some of those little baby potatoes slice in half and mix with a dressing of mayo, ketchup, sriracha, scallion whites, chopped kimchi, lime juice and salt, let cool to room temp and top w scallion greens. muah
I make this all the time, except i never have scallions around or feel like chopping onions so I leave that out. I do always have Korean pantry staples & half an English cucumber lying around though and it’s a fun, easy, and versatile side dish/bowl component. love Korean food love maangchi
