on the train this morning I very smoothly transitioned from Ferrante’s third neapolitan novel into a friend’s copy of The Sense of an Ending by Julian Barnes
Especially when it's a sizeable one and you haven't read any books for months and months ( Just tore through Christopher Isherwoods 'Goodbye to Berlin' )
I do not need a new wardrobe, packing cubes, new toiletry bag, etc. I have everything I need. Reminding myself of this in the heat of the moment feels like coming down from a frenzy I never wanted to have in the first place.
Prosciutto, salami, etc. started in a cold pan and left to crisp and render their fat. They shrink up and become crispy and delicate and cheek-puckering in their salinity. Highly recommend accompanying with toasted bread and an over easy egg fried in the oils in the pan.
It’s way better than what you can buy in shops, and you can make tons to eat with every single bite of fish. - mayo (I assume yogurt is ok too for healthy ppl but I am lactose intolerant)
- finely diced raw onion, can be white or red or shallots
- chopped capers (not traditional but they add to the overall sourness/vinegar-ness)
- lots of chopped fresh dill and/or parsley
- fresh lemon juice
- finely diced pickles
- salt and pepper Some people put boiled eggs in tartar sauce but I think that is too much effort for what should be a quick dip. Measure with your heart and enjoy!
