I made shrimp scampi tonight and had a glass of white wine with it. It was absolutely delicious and definitely one of the better meals that I have cooked. Here is how I made it:
- Sautéed shrimp until brown, removed from pan
- With shrimp residue, added about a cup of white wine
- Added chopped garlic, shallot, and dill to the wine
- Reduce
- XANTHAN GUM, a secret to making sauces that don’t break👨🔬
- Added half a stick of butter and melted at a medium temp
- Added pasta water to thicken
- Add shrimp and pasta
- Game over
