🎃 MY PUMPKIN CHOCOLATE CHIP BREAD RECIPE
fall is here my friends! 🍂 here’s a recent recipe i’ve created for a yummy pumpkin bread. chocolate chips are optional of course. add to a muffin or cupcake pan instead of a 9x5 and add cream cheese frosting for an easy dessert to bring to a party. happy baking!!! ✨ Pumpkin Chocolate Chip Bread 🎃 Ingredients:  -1/2 Cup of Brown Sugar -1/2 Cup Granulated Sugar -1 Can of Pumpkin Purée -8 TBSP Unsalted Butter (About One Stick) Melted- let it sit for a few after melting so it isn’t too hot! -3 TBSP Neutral Oil (Options: Canola, Vegetable, Extra Light Olive Oil)  -1 Large Egg  -1/2 Cup of Greek Yogurt (I use the full fat 5% from Chobani but any type is fine)  -1 + 2/3 Cups All Purpose Flour  -1 TSP Baking Soda  -1 TBSP Vanilla Bean Paste or Vanilla Extract (Paste usually tastes the best but either option works well) -2 TSP Cinnamon (I usually use more than this to be honest- for all the fall vibes)  -Pinch of Nutmeg  -Pinch of Sea Salt Optional Ingredients:  -Pinch of Pumpkin Pie Spice  -Around 1 Cup of Choc Chops. Add extra if you want 🥰 (Semi-Sweet is usually best- but Dark would taste amazing in this recipe too!)  1.) Preheat your oven to 350F. You can use parchment paper OR a baking spray. I usually use the spray.  2.) *I use my KitchenAid for mixing, but you can use bowls and hand mix- instructions below* Add both sugars to a medium bowl and crack your egg. Mix these until you form a smooth paste. Add your oil and melted butter. Mix this for a minute or two. Add in your vanilla, yogurt, and pumpkin puree. Mix all ingredients for another minute or so.  3.) Get a new bowl for your dry ingredients. Add in your flour, baking soda, salt, cinnamon, nutmeg, and (optional) pumpkin spice. Mix it up a bit.  4.) Slowly add your dry ingredients to the wet batter (into the other bowl.) Do this little by little to make sure everything is mixed in correctly and you don’t have any lumps from the flour. Try your best to not over mix the batter at this stage, you just want it smooth!  5.) Optional: Add in chocolate chips into the batter.  6.) Use parchment paper OR baking spray in a 9x5 inch loaf pan. Pour your batter into the pan. *Optional: Add more chocolate chips and a sprinkle of cinnamon sugar on top to make it extra pretty!* 7.) Bake for at least 60 minutes. This of course depends on your type of oven, but I’ve found that I’ve had to keep my loaf in the oven for over an hour to bake fully. *Use the toothpick trick to see if it’s done!*  8.) Let it cool for a bit- enjoy!!!
