my ultimate comfort dish. what i make when im tired of all the other dishes i can cook. ive made this recipe three times now so i can officially vouch for it. it has a pretty long simmer time but its worth it! i usually let it simmer for 3-4 hr and then also while i am doing the dishes after i have added some pasta water. its always better the next day. have you made this?

super easy to make, and leaves you with meat that just falls apart… julia child‘s recipe is a classic but imo as long as you use a decent wine and some good stock, i feel like you can improvise a lot of aspects of the recipe/directions! it ends up stewing for at least 3ish hours and it makes the house smells so good !!!

So many different versions of this exist, so feel free to find whatever one suits you, personally I like Eric Wareheim’s version from Foodheim which I don’t see online anywhere. Great relatively easy dinner for cold nights. Basic idea is a stew with italian sausage links, garlic, crushed tomatoes, rosemary, pieces of pecorino romano, a splash of lemon juice, and the white beans and some of their liquid simmered for like 30-40 mins. Grate a little more fresh pecorino romano, drizzle some olive oil on top, serve and with some fresh baked bread, mamma mia!

this is my go to rainy day/feeling bleh meal. it’s creamy, cheesy, a little meaty and you still get some greens. plus it’s easy to throw together so it requires minimal brain power.
