I made a coconut cake with pineapple filling and cream cheese frosting! I toasted coconut and added that around the outside. Very sweet but tasted good. There are a few adjustments I’d make next time.
Truly it is so hard to find cake these days that is both light AND moist. It’s so light. Not at all cloyingly sweet. Just really nice.

i made the barefoot contessa's "beatty's chocolate cake" last night and now i have a cake in the house! courtney love said in her Grub Street Diet that she eats cake every day and she's a genius, so i'm trying to be more like her
