Honestly this username was kind of a gut decision and didn't have much thought behind it, but it's grown on me. Chadon beni, aka culantro, aka shado beni, aka shadow beni is an herb used a lot in West Indian food, especially pepper sauce. I'm half Trinidadian and I'm very thankful I grew up eating lots of different types of foods and spices. I've been to TT a few times and when I was a kid I remember getting shark and bake on the beach and there was this row of 20 condiments you could add to it. I just love that concept of being able to add as much or as little flavor as you want. I guess the name just spoke to me and kinda symbolizes how I like to live (and rec)? Variety is the spice of life, etc.

Thai chili flakes. I think nearly everything improves when it is a little bit spicy. Prik Bon adds that zing without altering the flavor like a jalapeño or habanero would.
