I just made this fried rice recipe because it’s one of my favorite things to order at thai restaurants and I had a ton of basil left over from the Union Square farmers market last week. Made it with a crispy chicken cutlet because a lot of spots when I would get Thai a lot living in Boston would have it as an option.
Probably was one of the best things I’ve cooked for myself in a while. If fried rice is something you make for yourself a lot, I highly suggest switching it up with a different recipe.

i literally cant stop eating fried rice and it’s so easy to make and it saves well and it makes me enjoy cooking so much more!!!! finding recipes u know u like and can incorporate into your weekly rotation makes buying groceries so much easier

I met Erin (@RIOTGRRRL) and Jake (@SLOWDAZZLE) last year after I started using PI.FYI—we organized a meetup before a Jonathan Richman show and immediately clicked over our shared taste in music and similar sensibilities. We started hanging out a lot and had some great times together. I’ve also gotten to know many of their friends, who are all really cool. Erin and Jake started dating a couple of months after the three of us became friends, but our group chat still pops off. Their friendship has meant a lot to me, especially since moving to NYC in 2023, and I really appreciate having them in my life.
