tart sticky lemon with crumbly crust. my secret is instead of making them in a glass dish like youโre supposed to, make them in a cupcake pan. much easier to serve, can eat handheld, more fun all around

itโs a claire saffitz recipe from bon appetit. itโs the taste of summer to me!! i used plums and nectarines this time but ive used peaches and cherries in the past too. itโs easy to make and hard to mess up.

Ingredients:
2 lemons (only the zest is used for the cake)
3 eggs
1 cup granulated sugar
1 cup vegetable oil
1 bottle of mineral water
1 packet of baking powder
~3 cups of flour (add the 3rd cup gradually until it reaches a smooth batter consistency)
Cake: Whisk the eggs and sugar together. Add the oil and mineral water, then mix well. Gradually sift in the flour and mix. Grate the zest of 2 lemons and fold it into the batter. Once well combined, pour the mixture into a greased and lightly floured cake mold.
Sauce: Juice one of the zested lemons. Finely chop the other and combine it with 4 tablespoons of sugar. Simmer for about 5 minutes. Let the cake cool slightly, then pour the cooled sauce over the cake.
BONUS: You can use the same recipe to make an orange cake! ๐

๐get one of those plastic lawn chairs & put it in a stream or river & sit in it where the water goes at least belly button height but preferably up to ur neck. & sit there & let the water run over u. let the fish investigate & nibble. crack a few cold ones if possible. do it with friends. Live
