surfchurch yes its my fave go-to pasta. its highly critical for me to use only fried spanish sardines, otherwise its not giving (atleast for me)

lucius i usually ballpark measurement of ingredients and i have so many variations but i'll try my best Spicy Sardine Pesto: - 250 grams of fettuccine or any pasta - teaspoon of salt for boiling pasta - save pasta water for sauce - baste 1 bulb of garlic in lots and lots of olive oil - Master's spicy fried spanish sardines (master's is a local brand of canned sardines maybe buy someth similar or diy idk) - 50 grams?? of pesto sauce (i buy ready made sauce that's packed for 250 grams of pasta bc there's no basil in our local market T.T) optional stuff u can dump in the sauce before u put the pasta or use as toppings: - parmesan/pecorino cheese - sun dried tomatoes - chili flakes Hungarian Sausage wt Sweet Onion Sauce: - fry 2 hungarian sausages in olive oil then take em out (i slice them up into bites before cooking bc why not) - caramelize 2 red onions (rings or thinly sliced) using the remaining olive oil and add a spoon of butter - salt and pepper - worcestershire sauce (maybe a teaspoon hehe) - drizzle a smol amt of honey et voila just adjust ev thing to ur taste bc i feel like this is to be followed, it's gonna be crap

with apologies to vego, vegan, and kosher peeps, this hot, calabrese pork sausage—really more of a paste—is incredible. spread it on toast and have fried eggs on top. dissolve it into a bit of oil for a quick pasta sauce. the possibilities are endless.

- i have somewhere to go to when i am bored with my work from home setup - i have the privilege of taste testing their new stuff - they give me free shit lmao - we can share our cool hobbies/interests - we get to talk about the craft which they're so passionate about or just have a wholesome conversation
