The point of someone asking “what kind of music do you like?” is to get to know you better. Saying “everything” not only defeats the purpose of the question, it also halts the flow of the conversation. If you aren’t sure what you like, you can say something like
“I’ve been looking for new music, have you heard anything good lately?”
