any recipe that tells you it should only take 20 minutes is not being honest with you. Find ways to lengthen the cooking experience: build layers of flavor, cook the onions for a long period of time, simmer spices in oil (fresh ground if you can do it bc I couldn’t today) and just cook the shit out of it good is 1-2 hours but the best for me has always been 3-4
