didn’t know I liked these until the other day because I have an unease around the concept of lobster. too buggy and kind of rich and creamy in a way I find distasteful. decadent. anyway, on a roll you can hardly tell it’s lobster, you just get a nice ambiguous seafood taste on bread with toppings. my local bar does one with yuzu aioli and kohlrabi….. hits hard.
