Ooh I haven’t tried the nachos but PK’s Indian-ish baked potatoes are also super easy but absurdly good and everyone loves them. they’re in her book and on NYT Cooking

im just riffing here
A galette if you have a bakery you trust. Peach or blueberry I think. the right balance between delicious, effortless, and easy to eat
blood oranges or pears and dark chocolate (tho this is a little wintry I guess)
heirloom tomatoes sliced salted and plated with olive oil
hunks of delicious bread with slabs of cheese and a bowl of cornichons
alternatively potato chips and caviar

Lightly salted mussels in a tin Zhoug sauce Chocolate chip dippers Their potstickers and gyozas Inca corn snacks Sesame sticks Some reason I really like their sliced cheddar cheese lol Their kimbap is kinda good and a really easy snack or meal if you don’t eat a lot Various refrigerated raviolis, gnocchi, and tortellini
