My go-to (fairly) inexpensive (very) easy well-rounded meal.
1. near east couscous is your base. I like the pine nut or the garlic best 2. Sautéed cremini/baby bella mushrooms (see pinned rec for my thoughts on the luxuriousness of this) 3. Pan-fried or oven-roasted pre-cooked sausage. Aidells is best imo but whatever you like — I mix up the flavor on the reg 4. Whatever cooked green veg floats your boat— I’m partial to broccolini or asparagus. Also pan-fried or oven roasted.
I think if you cook whole packages of all of this it’s maybe like $18 and will last at least 3 meals. I love it!

just follow that equation and you'll be good
lean meats: - Turkey (ground, sausage, etc) - Chicken - Fish (fw baked salmon in the oven) - eggs (not a meat, but awesome. I'll be lazy and make an omlette for a meal often) easy to prep veggies: - onion (saute w ur green beans!) - bell peppers (saute, any color goes great with onions) - brussel sprouts (ik they are supposed to suck but saute in olive oil with garlic and then top with parmesean cheese and they're so good) - asparagus (olive oil, paprika, garlic and pepper, toss that shit in the oven yum) - avocado (technically a fruit but awesome topper for savory meals and a great snack by itself) - tomatoes (also a fruit, but dice them and stick em on top of your meal for an elevated experience)
I rly fw potatoes too, bc you can fry em in a pan or lazily bake them and bam its a side. Also never underestimate just some toast with butter.
Upping ur fruit game is a big win too- there are so many fruits and most of them are good so try anything. natures candy fr .
pro tip: make a big pot of soup/stew (tortilla soup is my fave) and eat off that for the week

Vegan Caldo Verde * 1 large yellow onion diced * 1 lb carrots sliced * 6 cloves of garlic minced (but go with your heart as always for garlic) * Cayenne pepper * 2 tbsp Better Than Boullion veggie base (optional) * 2-3 russet potatoes sliced * 1-3 bunches of kale chopped depending on bunch size on how much of a kale fiend you are (lacinato is my preference) * 1-2 cans of cannellini beans
In a large dutch oven (mine is 5.5 quarts) or pot heat 2-3 tbsp olive oil over medium heat and saute the onion and carrots for a few minutes. I sprinkle in some kosher salt, black pepper, and cayenne pepper too. Throw in the garlic and saute for another minute. I like to turn up the heat to medium high to get the fond/caramelization at the bottom of the vessel, just be careful that it doesn't burn.
Pour in 2.5 quarts of cold tap water and scrape off the fond at the bottom of the pan with a wooden spoon. This may result in a satisfactory broth on its own for you, but you can add the veggie base if you want. Turn up the heat to high to get the broth to boil, then toss in the potatoes. Turn heat back down to medium to maintain boil.
When the potatoes are tender, go to town on them with a masher, then add the kale. When the kale is like 2/3 done I add the cannellini beans and keep cooking until the kale and beans are done.
I love this recipe bc it's easy to shop for, easy to make, filling (you can add leftover rice to make it even more filling), budget-friendly, and nutritious. You can freeze it too.

White rice + broccoli + protein Most of the time I'll use canned sardines or ground turkey or pork chops or chicken breast/thigh, but I've used tofu before.
