I like doing tinned fish or jammy egg with rice or quinoa and then whatever produce I have on hand. Otherwise I am a big advocate for sweet potato (stab with fork and microwave) with whatever toppings u want

I second this! Steamed white rice and broccoli with gochujang ground turkey gets me through my work week. Affordable, easy, quick, clean, and pretty good!

I loosely follow eric kimโ€™s recipe below for the tuna, some marinated tofu would also work well. Then I make a big pot of rice, and add whatever toppings I have on hand throughout the week (kimchi, cucumber, cilantro, sesame seeds, all things that require very little of you and can be done ahead)
For the lentils, I make a big pot at the beginning of the week and again, top with various things I have around (an egg, a handful of arugula, lemon, yogurt, garlic)
I find that having two bases that are different enough and customizable keeps feeding yourself simply from feeling like a punishment while you focus on other things.
