I am ~first-gen~ Italian (first-gen american from Iti rents is what?) so pls just. Put a ladle of pasta water (while your nudies are cookin) into your sauce (in a saucepan) like a few min before you're done cooking the pasta itself. Then add pasta to saucepan and cook another minute all together. This is my mamma's recc so shout out Chiara.

(from Not Another Cooking Show on yt) - sweat down chopped white onions - roasted/charred and peeled red peppers (i sometimes also mix red and yellow peppers), then chopped and added to onions - add double cream - blend - add grated pecorino
(best type of pasta to use with this is trofie)
so tasty & light, yet unique. dare i say, better than napoletana (tomato) sauce.
