The coconut cake at M. Wells

Truly it is so hard to find cake these days that is both light AND moist. It’s so light. Not at all cloyingly sweet. Just really nice. Bad pic so you’ll have to check it out for yourself..(also pictured is rainbow cookie sundae.)

TRY MAKING A NEW CAKE

I made a coconut cake with pineapple filling and cream cheese frosting! I toasted coconut and added that around the outside. Very sweet but tasted good. There are a few adjustments I’d make next time.

I like setting the rice cooker while I get ready for the day, it’s like a timer for my routine. Sometimes I’ll make an egg to go on top, but usually I just mix the rice with a packet of instant miso soup and some hot water to make a savory porridge/ochazuke.
