I understand, and listen there are fantastic short books like Of Mice and Men, The Houseguest: And Other Stories, or even more abstract like Grief is the Thing with Feathers, BUT I think a great way to get back into reading and get the stamina back in check is a good middle-grade fiction book!
Super easy, often a race to the finish, couple twists, fun characters, and lots of whimsy before adults think they are too old for whimsy.
Some options I would recommend to start are Magnolia Wu Unfolds It All, Matilda, Hatchet, The Alchemist, The Secret Garden or even a Percy Jackson!
Itโ€™s important to remember reading is fun so starting with a fun book is a great trick!

of this one series but I remember reading it as a middle schooler in the early-00's and it was about a group of children with supernatural abilities. one girl was telepathic and listened to metal to drown out peoples thoughts, and there were some dark creatures that caused magnetic disturbances (paperclips made a big appearance) and now that I've written it out it sounds quite a bit like stranger things.
but also, Redwall Captain Underpants Animorphs Incarnations of Immortality (which was v much not age appropriate mom what were you thinking) The Wheel of Time series The Dark Tower series

The Alan MacMasters Hoax: a group of students edited the Wikipedia page about electric toasters to include the false claim that Alan MacMasters invented it in 1893.
Wait, it gets better.
Later, one of the friends created a separate profile for Alan with a doctored image of himself, made to look like it was from the 19th century.
Now the good stuff.
Newspapers, government offices, and museums perpetuated the story that Alan MacMasters invented the toaster. Eventually MacMasters was nominated to appear on the ยฃ50 note.
