Go down south and no matter where you are, they have a regional style.
North Carolina - whole hog pork BBQ, vinegar based sauce
Texas - beef BBQ, but salt & pepper brisket specifically
Kansas City - ribs primarily, sweet sauce similar to like a sweet baby rays
South Carolina - mustard based sauce, usually whole hog like North Carolina
Memphis - spicy dry rub when I’ve had it but apparently they do a wet sauce too
Hard to pick a favorite among them but I’d have to lean towards South Carolina style, the mustard gives it a zhuzh past the regular vinegar
